Today over three million wild kangaroos are harvested and the meat is exported to 40 countries each year. Kangaroo meat is extremely healthy. Fat levels of kangaroo meat are typically one percent so the meat must be cooked rare and with care to avoid overcooking.  State law prohibits the sale and consumption of kangaroo in California.
